There is no other way to say goodbye to summer and hello to football season than with a backyard BBQ. Celebrate these last few weeks of enjoying the sun with family and friends over some burgers, fries, and lemonade! If you are vegan, fear not; we have a vegan burger for you. As always, don’t forget about your greens and head to your local farmers market for salad inspiration.

The recipe for Jicama Fries is below. The recipes for our KetoFLEX 12/3-friendly Buns, Veggie Tofu Burger, Pastured Beef or Bison Burgers, and Refreshing KetoFLEX 12/3 Lemonade, are available to members of the PreCODE or ReCODE monthly subscription program.

Jicama Fries

If you love french fries, this recipe may be the perfect alternative for you. Jicama, also known as the Mexican potato, is an underrated tuber vegetable rich in prebiotic fiber. Most of the time, jicama is seen in salads, but it is also delicious when baked. Its subtle sweet and starchy flavor makes it a fabulous alternative to a potato when making fries.

Ingredients:

• 1 jicama, peeled and cut into ¼ inch matchsticks
• 1 tbsp avocado oil
• 1 1/2 tsp garlic powder
• 1 ½ tsp onion powder
• 1 tsp sea salt
• ½ tsp ground cumin

Optional: Cilantro for garnish

Directions:

1. Preheat oven to 350 F.
2. In a medium saucepan, bring the water to boil over medium heat.
3. Add in the sliced jicama and cook for ten minutes until the jicama is less crunchy or slightly tender.
4. Drain the water with a strainer.
5. Place the jicama into a large bowl, add in the rest of the ingredients and toss to coat evenly.
6. Transfer the jicama onto a greased baking sheet, making sure the jicama slices are decently spread apart. If they are too close together, they will steam instead of turning crispy!
7. Bake for about 20 to 30 minutes on each side.

KetoFLEX 12/3 Buns

It may not be a brioche bun, but it is pretty darn close! No burger is complete without a fluffy bun. This recipe takes some work and patience, but it’s worth it! If you have leftover buns, you can toast them and smear with almond butter.

Veggie Tofu Burger

This is a vegan alternative to a meat burger but still just as delicious. This recipe can also be used to make meatballs, so it’s a “twofer!” Get creative with your toppings, and don’t forget to pair this recipe with the Jicama Fries recipe above.

This beverage only calls for three simple ingredients, freshly squeezed lemon juice, monk fruit sweetener, and water. It’s perfect for a hot day, and if you have leftover lemonade, you can pour it into a few popsicle molds to make a delicious treat for later.
