Even if Cinco de Mayo has passed, there is always room for Mexican food so this month we are featuring a Kojito which is a virgin Mojito with a twist (see the recipe below). Enjoy the citrusy and bold flavors of these Latin dishes with your family and friends, and imagine you are off vacationing somewhere in beautiful Mexico.

Instead of a Mojito, have a Kojito! Since alcohol is a neurotoxin, we’ve created this mocktail that tastes great and makes you feel like you are on vacation. Instead of rum, we used a low glycemic kombucha, a fermented tea that is rich in probiotics. Probiotics help to maintain and create a healthy microbiome which is important for brain health and should be included in your daily diet. To learn more about the benefits of probiotics, please read  Chapter 5 of the Nutrition Guide available to our members of the PreCODE and ReCODE programs. In the meantime, grab a Kojito and, as they say in Spanish, “Salud,” which means “to health.”

Ingredients:

• 5 limes quartered
• 40 grams of fresh mint
•1 ½ cups low sugar kombucha, and I used Health Aid Kombucha-Ginger Lemon
• 2 ½ cups sparkling water
• Ice as much desired
• Pure stevia as needed. (SweetLeaf is a recommended brand.)
• Extra mint and lime for garnish

Directions:

1. In a large pitcher, add the mint, including the stems, limes, and muddle well (about 2 minutes) to release the juice from the limes and mint.

2. Add in the kombucha and sparkling water.

3. Add stevia to taste.

4. Mix well and enjoy!
