While the winter chill lingers on, we all spend cozy time inside craving comfort food. We’ve put together a few classics with a brain-healthy twist that are sure to please the whole family.

Easy Caesar Dressing

This simple, homemade dressing is the secret to a perfect Caesar salad. It takes just minutes to put together and is so thick and delicious that you can also use it as a dip for both raw and lightly roasted veggies. We include lots of neuroprotective ingredients including anchovies and pastured eggs for a rich umami flavor.

This recipe includes a small amount of cheese to create a genuine Caesar dressing. We recommend Parmigiano-Reggiano from Italy that can be difficult to find. Authentic Parmigiano-Reggiano is always A2, a less inflammatory type of dairy. Alternatively, you can use grated manchego (sheep cheese from Spain, also A2) that’s widely available. It has a similar flavor with a slightly creamier texture. Those who are lactose intolerant can substitute with nutritional yeast for a similar cheesy flavor.

Yield: 1 cup or 16 (1 tbs) servings

Tips: This recipe requires an infusion (or stick) blender and a tall cylindrical container.

Ingredients:

● 1 oz. anchovies, drained and finely chopped, best from a jar
● 1 cloves garlic, peeled and finely chopped
● 1 pastured egg
● 1 tbs fresh lemon juice
● 1/2 cup, plus 1 tbs of high polyphenol extra virgin olive oil (EVOO)
● 1/2 tsp Dijon mustard
● 1 tbs of Parmigiano-Reggiano from Italy (You can substitute with grated manchego or nutritional yeast for those who are lactose intolerant. See notes above.)

Directions:

1. Drain and finely chop the anchovies, then add to the cylindrical container.

2. Add peeled and finely chopped garlic to the container.

3. Add the egg.

4. Add the freshly squeezed lemon juice, EVOO, Dijon mustard, and cheese (or nutritional yeast.)

5. Place the immersion blender to the bottom of the container and blend for a full minute or longer until all ingredients are fully blended to a thick, smooth, creamy texture.

6. This is best served immediately but will keep in the refrigerator for a day. Let sit at room temperature for 10 minutes and whisk again before using.
