Beef Burgers with Mushroom Sauce

Need a quick brain-healthy meal? These nourishing, grass-fed-and-finished burgers with mushroom sauce won’t disappoint. Mushrooms help protect the brain by providing powerful compounds like ergothioneine and beta-glucans, which reduce oxidative stress, lower inflammation, and help defend brain cells from age-related damage.

Yield: Serves 2

Ingredients:

  • 3 cups mushrooms, thinly sliced (about 225 g)
  • 1 tbsp avocado oil
  • 1 small shallot, finely minced
  • 2 garlic cloves, minced
  • ½ cup chicken or beef bone broth
  • ¼ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 1 tsp fresh thyme leaves, chopped
  • 1 tbsp nutritional yeast
  • 1 tsp high polyphenol extra virgin olive oil (EVOO)
  • 1 tbsp fresh parsley, finely chopped
  • 2 Trifecta grass-fed & finished beef burger patties

Directions:

  1. Heat avocado oil in a skillet over medium heat.
  2. Add mushrooms in an even layer and cook undisturbed for 4–5 minutes until softened and lightly golden.
  3. Stir and continue cooking for 2–3 minutes, until moisture releases and evaporates.
  4. Add shallot, garlic, sea salt, and black pepper. Cook 30–60 seconds, until fragrant.
  5. Pour in bone broth and scrape the bottom of the pan. Simmer for 3 minutes, until slightly reduced and glossy.
  6. Lower the heat, add thyme and nutritional yeast, and mix well.
  7. Place the burger patties on top of the mushroom sauce. Cover the pan and warm the burgers for 3–5 minutes.
  8. Remove from heat. Transfer burgers to plates and spoon mushroom sauce over the top.
  9. Finish with EVOO and sprinkle with parsley.
  10. Serve as is or over cauliflower mash.

Lemon Garlic Green Beans with Toasted Almonds

These bright, tender-crisp green beans, rich in antioxidants like vitamin C and brain- healthy flavonoids, are tossed in a foolproof lemon-garlic olive oil sauce and finished with toasted slivered almonds and fresh herbs. This is a simple, elegant, and crowd-pleasing side dish that feels special while staying easy and approachable.

Yield: Serves 4

Ingredients:

  • 16 oz Trifecta meal prep green beans
  • 2 tbsp high polyphenol extra virgin olive oil (EVOO)
  • 3 cloves garlic, finely minced
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1/4 cup slivered almonds
  • 1/4 tsp sea salt (or to taste)
  • 1/8 tsp freshly ground black pepper (or to taste)
  • 2 tbsp finely chopped fresh parsley or dill

Directions:

  1. Heat a large skillet over medium heat. Add the slivered almonds and toast, stirring frequently, until lightly golden and fragrant, about 3–4 minutes. Transfer to a small bowl and set aside.
  2. In the same skillet, add the EVOO and warm over medium heat. Add the green beans and cook, stirring occasionally, for 5–7 minutes, until bright green and tender-crisp.
  3. Add the minced garlic and cook for 30–60 seconds, just until fragrant. Do not let the garlic brown.
  4. Turn off the heat. Add the lemon zest, lemon juice, sea salt, and black pepper. Toss well to coat the green beans evenly.
  5. Transfer to a serving dish. Sprinkle with the toasted almonds and chopped fresh herbs.
  6. Taste and adjust salt or lemon if needed. Serve warm.
