Let’s celebrate early-summer abundance in a way that feels elegant, refreshing, and nourishing. Think vibrant color, clean flavors, and simple ingredients that feel fresh, satisfying, and brain-healthy.

Lime Mint Botanical Spritzer

This crisp botanical mocktail offers the lightly bitter flavor of a gin and tonic — without the alcohol. Fresh lime adds bright citrus, muddled mint brings a refreshing herbal note, and a whisper of ginger adds gentle warmth. Finished with a splash of botanical tonic, it’s a festive, hydrating summer drink that feels sophisticated and grown-up.

Tips:
- Use USDA organic limes to help minimize exposure to fungicides from conventionally grown citrus.
- Use the botanical tonic as an accent. A little goes a long way, adding that classic tonic-style bitterness and complexity while keeping the drink light and refreshing. We used Top Hat Sugar-Free Diet Tonic, which is concentrated and uses monk fruit as the only sweetener.
- For a softer flavor, use less lime and let the mint and ginger shine.
- For a sharper, more cocktail-like finish, add an extra squeeze of lime.
Ingredients:
- 8–10 ounces sparkling mineral water
- 1 ounce or less sugar-free botanical tonic (e.g., Top Hat Sugar-Free Diet Tonic)
- Juice from several fresh lime wedges
- A generous handful of fresh mint
- 1 very thin ribbon of fresh ginger root
- Ice
- Extra mint and lime for garnish
Directions:
- Add the mint, lime juice, and ginger ribbon to a tall glass.
- Gently muddle just enough to release the mint oils and ginger aroma.
- Fill the glass with ice.
- Add the botanical tonic.
- Top with sparkling mineral water.
- Stir gently.
- Garnish with extra mint and a lime wheel or wedge.
